Fluffy, Chewy Bibingka

These rice and coconut milk batter cakes are a staple at Christmas, often sold fresh and hot out of a portable charcoal oven outside of churches when the early morning services (Simbang Gabi) finish - but are also popular all year round. Baked in banana leaves, our version of bibingka are sweet, fluffy, chewy and downright delicious, with a savoury crust provided by a sprinkle of keso de bola (Edam cheese) on top. They are gluten-free, nut-free and can be made dairy-free.

Think of them as a muffin crossed with a crumpet, and enjoy them with anything from salted butter to clotted cream to custard to ice cream, or with one of our favourites: either Don Papa Rum salted coconut caramel or barako coffee buttercream.
